Mix pork, ginger, soy, and wine. Place 1 tsp filling in center of each wrapper. Fold into wonton shape. Boil in batches — 3 min after they float.

Mix chili oil (with the dark sediment at the bottom), Sichuan pepper, vinegar, soy, sugar, and minced garlic. Drain wontons, toss in sauce while hot. Each wonton should be coated in a fiery, numbing, tangy red glaze.
