Why This Recipe Works

  • Two components: a 3-minute sesame sauce + a 10-minute pork topping. Combine = restaurant noodles at home.
  • Tahini + sesame oil is a perfect substitute for Chinese sesame paste (which is hard to find).

15 ml (1 tbsp)Chinkiang vinegar镇江香醋balsamic + sugar
10 ml (2 tsp)sesame oil香油
15 ml (1 tbsp)chili oil辣椒油Lao Gan Ma or any chili crisp

Instructions

1

Make the sauce(3 min)

Mix tahini, soy sauce, vinegar, sesame oil, chili oil, and 2 tbsp warm water. Whisk until smooth. Divide between two serving bowls.

2

Cook noodles(8 min)

Boil noodles according to package directions. Drain and toss with a tiny splash of sesame oil to prevent sticking.

3

Cook pork(5 min)

Heat skillet over high heat. Add pork, breaking it up. Cook until crispy and browned, 4-5 minutes. Season with 1 tsp soy sauce.

4

Assemble(1 min)

Place noodles on top of the sauce in each bowl. Top with crispy pork. Garnish with chopped green onions and extra chili oil. Mix everything together before eating.

Pro Tips for Western Kitchens

Tahini separates — stir the jar thoroughly before using, and warm it slightly in the microwave if it's too thick.

💡 I once tried to save time by not toasting the Sichuan peppercorns. The flavor was flat and dusty. Toasting them whole for 60 seconds in a dry pan wakes up oils that make the dish sing. Never skip it.

Frequently Asked Questions

What noodles should I use?

Chinese wheat noodles (look for 'lo mein' or 'ramen' style). In a pinch, spaghetti or linguine work surprisingly well — they have a similar chew.
