Braise and glaze(1h 5m)

Blanch ribs 3 min. Sear until browned. Add wine, soy sauces, sugar, star anise, water to cover. Simmer 50 min. Uncover, boil hard 10 min until sauce is thick and sticky. The ribs should be glossy red and falling off the bone.
