Stir-fry gochugaru in oil to bloom the chili (30 sec). Add garlic, ginger, and seafood — toss 2 min. Pour in chicken stock, add cabbage and onion. Bring to a rolling boil. Add noodles directly to the pot and cook 3 min. The broth should be fiery red and intensely savory.
