Blanch ribs in boiling water 2 min, rinse. Return to pot with fresh water, ginger, and dried scallops. Simmer 15 min. Add cubed winter melon, simmer 10 more min until melon turns translucent. Season with salt. The melon absorbs the pork flavor while staying refreshingly light.
