Heat wok until smoking. Sear shrimp 1 min per side, remove. Add oil and garlic, then bok choy — stir-fry 1 min in the garlic oil. Add a splash of water, cover 30 sec. Uncover, return shrimp, add oyster sauce. Toss and serve. Bok choy should still be bright green and crunchy.
