Marinate beef in soy and cornstarch 5 min. Heat wok till smoking. Sear beef in a single layer 1 min, flip, sear 30 sec, remove. Same wok: fry onion 1 min. Return beef, add cumin seeds and chili flakes. Toss 30 sec. The cumin should be toasted and intensely aromatic.
