Score and steam

Score both sides of fish with 3 diagonal cuts. Place ginger inside fish cavity and on top. Steam over high heat 10-12 min until fish is just opaque.

Sizzle for good luck(12 min)

Pour off any steaming liquid. Drizzle soy sauce over the fish. Pile shredded scallions on top. Heat oil until smoking and pour over scallions — the sizzle releases aromatics and symbolizes a sizzling start to the New Year. Serve whole (never flip) to preserve good luck.
